Steamed in its own juices, this grilled salmon in foil is incredibly tender. Curry adds a punch of flavor that's perfectly balanced by onion and tomato. —Merideth Berkovich, The Dalles, Oregon

Ingredients

  • 4 salmon fillets (4 ounces each)
  • 1 teaspoon garlic powder
  • 1 teaspoon lemon-pepper seasoning
  • 1 teaspoon curry powder
  • 1/2 teaspoon salt
  • 1 small onion, cut into rings
  • 2 medium tomatoes, seeded and chopped

Directions

  1. Place each salmon fillet, skin side down, on a double thickness of heavy-duty foil (about 18x12 in.). Combine the garlic powder, lemon pepper, curry powder and salt; sprinkle over salmon. Top with onion and tomatoes. Fold foil over fish and seal tightly.
  2. Grill, covered, over medium heat for 10-15 minutes or until fish flakes easily with a fork. Open foil carefully to allow steam to escape.

Grilled Salmon in Foil Tips

How can you tell when the grilled salmon in foil is cooked?

Checking the internal temperature is the easiest way to tell if your salmon is cooked just right—the salmon needs to reach 140°F. No thermometer? Make sure the fish flakes easily with a fork. Lots of white stuff (a protein called albumin) on top of your salmon could indicate it's overcooked.

How do you store leftover grilled salmon in foil?

Keep salmon dishes in the fridge for up to three days. To reheat, try using low heat in the oven instead of microwaving leftover salmon. Cover fish with foil and warm at 275° for 15 minutes. You can also serve it flaked, cold, over a simple homemade salad.

What should you serve with grilled salmon?

There are so many fantastic pairings for grilled salmon recipes. Try dipping it in this sweet-hot Asian dipping sauce, serving it with a fruity side salad or hearty rolls and garlicky potatoes. Just make sure you know how to grill salmon so it doesn’t stick to the grates!
