3 tablespoons vegan butter-style sticks, such as Earth Balance
2 tablespoons all-purpose flour
1-1/2 cups unsweetened refrigerated soy milk
2 tablespoons nutritional yeast
1/2 teaspoon salt
1/4 teaspoon pepper
Dash ground nutmeg
Hot cooked pasta
Directions
In a small saucepan, melt vegan butter over medium heat. Stir in flour until smooth; gradually whisk in soy milk. Bring to a boil, stirring constantly. Remove from heat; stir in nutritional yeast, salt, pepper and nutmeg until smooth. Let rest three minutes or until thickened. Serve with pasta.
